It's hand-churned with no dairy at all — the fruit purée and syrup freeze inside a metal canister packed in crushed ice and rock salt while you rotate and scrape it continuously, which produces a lighter, icier texture than dairy-based ice cream.

Freezing Agents

  • 20 lbsCrushed Icefor packing outer barrel
  • 3 cupsCoarse Rock Salt (Sal de Grano)essential to drop ice temperature

    Make the syrup

    Dissolve sugar in water over low heat, then cool completely. Mix with fruit, lime, and salt.

    Fill the canister

    Pour into the inner metal canister of a garrafa-style freezer or a small lidded metal container nested inside a larger bucket.

  3. Empaca hielo y sal

    Pack ice and salt

    Pack alternating layers of crushed ice and rock salt around the inner canister.

  4. Gira sin parar

    Churn continuously

    Rotate the canister continuously while scraping the freezing mixture from the walls every few minutes.

  5. Continúa hasta espesar

    Churn until scoopable

    Continue until thick, fine-grained, and scoopable, 35 to 50 minutes.

    Serve immediately
