Can I make this flan a day ahead?
Yes — you should, in fact. It needs at least 6 hours in the refrigerator to fully set after baking, so making it the day before you plan to serve gives it time to firm up and makes unmolding easier.

Prep the oven
Heat the oven to 350°F (175°C). Place a 9-inch round cake pan inside a larger roasting pan.

Melt sugar in a dry saucepan over medium heat until amber. Immediately pour into the cake pan and tilt to coat the bottom.
