Adobo de Puerco
Adobo-Braised Pork
Pork shoulder browned hard for a deep crust, then braised low and slow in a silky ancho-guajillo adobo until fork-tender — even better if the meat rests in the marinade first.

Before you cook
Can I marinate the pork in the adobo ahead of time?
Yes — resting the pork in the adobo for 2 to 12 hours before braising produces a deeper flavor, though the dish is still excellent if you braise it right away without marinating.

6 pasosTuesta y remoja los chiles
Toast and soak the chiles
Wipe the chiles clean. Toast them in a dry skillet over medium heat for 10 to 15 seconds per side, just until fragrant, then cover with very hot water and soak for 15 minutes.
Licúa el adobo
Blend the adobo
Drain the chiles and blend with the garlic, onion, vinegar, 1/2 cup broth, oregano, cumin, cloves, salt, and pepper until completely smooth. Strain for a silkier sauce.
Dora el cerdo
Brown the pork
Pat the pork dry. Heat the lard in a heavy Dutch oven over medium-high heat and brown the pork in batches so the pieces develop a deep crust rather than steam.
Cocina el adobo
Cook the adobo
Return all the pork to the pot and pour in the adobo. Stir for 3 to 4 minutes, scraping the bottom, until the sauce darkens slightly and loses its raw chile aroma.
Cocina a fuego lento
Braise the pork
Add the remaining broth and bay leaf. Bring to a gentle simmer, cover, and cook over low heat for 1 1/2 to 2 hours, stirring occasionally, until the pork is fork-tender.
Reduce y sirve
Reduce and serve
Uncover for the final 15 minutes if the sauce is thin. Adjust the salt and vinegar, then serve with warm corn tortillas, rice, or beans.
