    Form the meatballs

    Combine all the meatball ingredients gently and form 18 to 20 compact balls without overworking the meat.

  2. Prepara la salsa

    Blend the sauce

    Roast or boil the tomatoes until soft, then blend with the onion, garlic, chipotle, adobo sauce, and 1 cup of the broth.

  3. Cocina la salsa

    Cook the sauce

    Heat the oil in a wide pot. Pour in the tomato-chipotle purée and cook for 8 minutes, stirring, until slightly reduced and brick red.

    Add broth and vegetables

    Add the remaining broth, carrots, and potatoes. Bring to a simmer and cook for 8 minutes.

    Cook the meatballs

    Carefully lower the meatballs into the simmering sauce. Cover and cook gently for 25 to 30 minutes, turning once, until the rice is tender and the meatballs are cooked through.
