Before you cook

What is hoja santa, and can I substitute it?

Hoja santa is an anise-scented Mexican herb used here in the bean filling; if you can't find it, you can leave it out. Either way, tetelas are naturally vegetarian, filled with just beans and optional cheese.

Masa Shell

  • 2 cups masa + 1.5 cups waterCorn Masa Harina & Warm Water
  • 1/2 tspSalt

Filling

  • 3/4 cupRefried Black Bean Pasteseasoned with avocado leaves, smooth

    Mix the dough

    Mix the masa, water, and salt. Let it rest for 15 minutes.

  2. Extiende la masa

    Press the round

    Press a masa ball into a thin 6-inch round.

  3. Rellena el centro

    Fill the center

    Place the beans, half a hoja santa leaf, and optional cheese in the center.

  4. Forma el triángulo

    Fold the triangle

    Fold three sides inward to form a sealed triangle, pressing the seams gently.

  5. Cocina en el comal

    Cook on the comal

    Cook on a dry, medium-hot comal for 3 to 4 minutes per side, including the folded edges, until cooked and spotted.
