Does the lemon-and-vinegar marinade cook the pork?

No — citrus and vinegar tenderize and flavor the meat but don't reliably kill pathogens the way heat does, so even after marinating for up to 24 hours, cook the pork fully on a very hot griddle or rotisserie until it's cooked through before serving.

  • 1 tspDried Thyme

Salsa & Assembly

  • 8-10 piecesPan Árabe (Thick Flour Tortillas/Pita-style)
  • 1 small canChipotle Peppers in Adoboblended for salsa

Instrucciones

  1. Prepara la marinada

    Make the marinade

    Mix the oil, lemon juice, vinegar, garlic, cumin, oregano, thyme, parsley, mint, onion, and salt.

  2. Marinar

    Marinate

    Add the pork and marinate for 2 to 24 hours.

  3. Cocina el cerdo

    Cook the pork

    Cook on a very hot griddle in batches, allowing the edges to brown and the pork to cook through, or stack on a rotisserie.

  4. Pica el cerdo

    Chop the pork

    Chop or slice the cooked pork.

  5. Rellena el pan

    Fill the bread

    Warm the pan árabe and fill with the meat.

  6. Sirve

    Serve

    Serve with thick chipotle salsa and optional jocoque.
