Tacos Árabes
Puebla Pita-Wrap Tacos
Thin-sliced pork marinates in olive oil, lemon juice, and fresh herbs, then griddles hot and gets tucked into pan árabe with thick chipotle salsa — Puebla's Lebanese-inflected take on the taco.

Before you cook
Does the lemon-and-vinegar marinade cook the pork?
No — citrus and vinegar tenderize and flavor the meat but don't reliably kill pathogens the way heat does, so even after marinating for up to 24 hours, cook the pork fully on a very hot griddle or rotisserie until it's cooked through before serving.
