Is beef tongue hard to work with at home?

Not once it's cooked. After a 3-to-4-hour gentle simmer (or about 75 minutes in a pressure cooker) the tongue is fork-tender, and the thick outer skin peels away easily while it's still warm, leaving just the tender meat to dice and griddle-sear.

  • 3 lbsBeef Tongue (Lengua)cleaned
  • 1 largeWhite Onionhalved
  • 6 clovesGarlicpeeled
  • 3Bay Leaves
  • 1 tbspBlack Peppercornswhole

Searing & Assembly

  • 2 tbspVegetable Oil or Lard
  • as neededCorn Tortillas
  • 1White Onionfinely diced
  • 1 bunchFresh Cilantrochopped

  1. Prepara la olla

    Set up the pot

    Rinse the tongue and place it in a large pot with the onion, garlic, bay leaves, peppercorns, and salt. Cover with water.

  2. Cocina la lengua

    Cook the tongue

    Simmer gently for 3 to 4 hours, or pressure-cook for about 75 minutes, until a knife enters easily and the meat is fully tender.

  3. Pela la lengua

    Peel the tongue

    While the tongue is still warm, peel away the thick outer skin completely, then trim the root and any excess gristle.

  4. Pica y dora

    Dice and sear

    Dice the tender meat. Moisten with a little strained cooking broth and sear lightly on a griddle, if desired.

  5. Sirve

    Serve

    Serve in warm tortillas with onion, cilantro, lime, and salsa verde.
