How are salbutes different from panuchos?

Salbutes are plain masa tortillas fried until puffy and crisp, with no bean pocket, while panuchos get a slit and a bean filling before frying. Both are finished with shredded chicken or turkey, lettuce, tomato, avocado, and pickled onion.

Salbute Base

  • 2 cups masa + 1.5 cups waterCorn Masa Harina & Warm Water
  • 1 cupLard or Canola Oilfor flash frying

Toppings

  • 1.5 cupsShredded Cooked Turkey or Chicken
  • 1 cupShredded Cabbage or Iceberg Lettuce
  • 1 avocado + 1 tomatoAvocado & Tomatosliced
  • 1/2 cupPickled Red Onions

Instrucciones

  1. Prepara la masa

    Mix the dough

    Mix the masa, water, salt, and optional flour. Let it rest for 15 minutes.

  2. Forma las tortillas

    Shape the tortillas

    Divide into 12 balls and press into small, slightly thick tortillas.

  3. Fríe y abomba

    Fry until puffed

    Fry one at a time in 350°F (175°C) oil, spooning hot oil over the top to encourage puffing.

  4. Termina de freír

    Finish frying

    Turn once and fry until lightly golden, puffy, and crisp outside but soft within.

  5. Sirve

    Serve

    Drain well and top immediately with chicken, lettuce, tomato, avocado, and pickled onion.
