Before you cook
Where can I find squash blossoms, and how do I prep them?
Look for fresh squash blossoms (flor de calabaza) at farmers' markets or Latin grocers; before cooking, trim off the stems, sepals, and the slightly bitter pistil, then rinse gently and pat dry, and stir them in off the heat so a brief 1-2 minute steep keeps their delicate texture intact.
