  1. Comienza el caldo

    Start the broth

    Place the chicken, water, onion, garlic, and salt in a large pot. Bring slowly to a boil, then reduce to a gentle simmer.

  2. Desespuma el caldo

    Skim the broth

    Skim foam and excess fat from the surface during the first 15 minutes for a clearer broth.

  3. Añade las verduras

    Add the vegetables

    Simmer partially covered for 35 minutes. Add the carrots, chayote, and corn and cook 15 minutes.

  4. Añade arroz y calabaza

    Add rice and squash

    Add the rice, if using, and simmer 10 minutes. Add the squash and cilantro and cook another 8 to 10 minutes.

  5. Verifica la cocción

    Check doneness

    Check that the chicken is fully cooked and the vegetables are tender but intact. Remove the onion, garlic, and spent cilantro.

  6. Sirve

    Serve

    Adjust the salt. Serve each bowl with chicken, vegetables, broth, lime, and warm tortillas.
