Why shouldn't I heat or cook this agua fresca?

Agua de sandía is meant to stay completely raw — heating the watermelon would dull the fresh melon aroma that defines the drink, so just blend, chill, and serve cold.

  • 4 cupsSweet Seedless Watermelondiced chunks
  • 6 cupsCold Waterdivided

Seasoning

  • 2 tbspLime Juicefreshly squeezed

    Blend the watermelon

    Blend the watermelon with 1 cup of the water until liquefied.

    Strain (optional)

    Strain if you want a smoother agua fresca, or leave it unstrained to keep the pulp.

    Combine everything

    Pour into a pitcher and add the remaining water, lime juice, salt, and just enough sweetener to balance the fruit.

    Chill

    Chill for at least 30 minutes, stirring before serving since the natural pulp settles.
